Brendan makes a killer blueberry pancake. It's so good we have to ration ourselves! Blueberries have been very abundant this year - they are even grown in Ireland nowadays. Apparently, a cold winter is what they need to thrive. I enjoy a few blueberries over my Oatibix in the morning, but their flavour is ten times better when cooked inside a pancake.Talking of berries, we're planning to go to Airfield this afternoon to collect blackberries. I'll then make an apple & blackberry crumble! Happy Days (though not as sunny and warm as on Thursday and Friday - those 2 days were the best of the summer, warm, and with that perfectly gorgeous September light)
